Oatmeal Raisin Cookies

INGREDIENTS
Makes about 48 cookies
1 1⁄4 cups unsalted butter, softened
1 cup packed light brown sugar 1⁄2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1⁄2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
3 cups old-fashioned rolled oats
1 cup raisins

Preheat oven to 350°F.
In the bowl of a stand mixer fitted with the flat beater attachment, beat together the butter, brown sugar and granulated sugar on medi- um speed until creamy. Add the eggs and vanilla and beat well.
In another bowl, stir togeth- er the flour, baking soda and cinnamon. Add the flour mixture to the butter mix- ture and beat on low speed until well combined. Stir
in the oats and raisins until well combined.
Drop the dough by the rounded tablespoonful onto ungreased cookie sheets.
Bake until the cookies are golden brown, 8 to 10 minutes. Transfer the cookies to wire racks and let cool completely.
