Nana Park’s Lemon Bars

“Nana Park’s lemon bar recipe was frequently prepared by Robbie’s maternal grandmother as a special treat when we would travel to visit her.” Barbara Buoniconti
INGREDIENTS PREPARATION
Makes 12 bars
1 box moist yellow cake mix
2 large eggs
1⁄3 cup vegetable oil
1 (8-ounce) package cream cheese, softened
1⁄3 cup granulated sugar 1 teaspoon lemon juice
1. Preheat oven to 350°F.
2. In a bowl, combine the cake mix, 1 of the eggs and the oil and stir with a fork until crumbly. Transfer 1 cup of the crumbs to a small bowl and set aside. Pat the re- maining crumbs lightly into a 9- by 13-inch baking dish.
3. Place the cream cheese, sugar, the remaining egg and the lemon juice in a large bowl. Using a hand- held mixer fitted with the beater attachment, beat on medium speed until smooth and well combined.
4. Spread the cream cheese mixture on top of the crumbs in the pan and sprinkle with the reserved crumbs.
5. Bake until golden brown
on top, about 15 minutes. Transfer the pan to a wire rack and let cool complete- ly, then cut into bars.
