Walnut Balls

“This recipe is special because we have made it as a family before many holidays and special occasions. They are fast and easy to make and easy to pop right into your mouth. Remember to make sev- eral batches since the recipe only yields about 40 one-inch balls.”
INGREDIENTS
Makes about 40 balls
1⁄2 cup (8 tablespoons) unsalted butter
2 tablespoons granulated sugar 1 teaspoon vanilla extract
1 cup walnuts, finely chopped 1 cup sifted all-purpose flour Confectioners’ sugar
PREPARATION
1. Preheat oven to 300°F. Grease a cookie sheet.
2. In the bowl of a stand mixer fitted with the flat beater attachment, beat the butter on medium speed until soft. Add the granulated sugar and beat until creamy, then beat in the vanilla.
3. In a small bowl, stir together the walnuts and flour, then stir into the butter mixture.
4. Roll the dough into 1-inch balls and place on the pre- pared cookie sheet.
5. Bake until the cookies are just beginning to brown, about 30 minutes.
6. Put confectioners’ sugar in
a shallow bowl. While the balls are still hot, roll in the confectioners’ sugar. If you want the sugar to form a glaze on the balls, return them to the oven for about 1 minute. Transfer the cook- ies to wire racks and let cool completely.
