Salmon with Miso Butter

“This is our daughter Violet’s favorite fish recipe, the one I’ve been making for her all summer. Good thing it’s so easy!”

INGREDIENTS Serves 4
2 tablespoons unsalted butter, softened
2 tablespoons white miso
4 (6-ounce) center-cut salmon fillets
2 tablespoons canola oil Salt
Ground black pepper
PREPARATION
1. Preheat oven to 425°F.
2. In a small bowl, mash to- gether the butter and miso until blended.
3. Rub the salmon all over
with the oil and season with salt and pepper. Place in a baking dish. Spread the miso butter over the top of the fillets.
4. Roast until the fish is opaque, about 15 minutes.
