Baxter’s Healthy Grilled Chicken Marinade

INGREDIENTS Serves 4
1⁄4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 teaspoon salt
1⁄2 teaspoon ground black pepper
1 teaspoon dried oregano 2 teaspoons Dijon mustard
4 (6-ounce) boneless, skinless chicken breasts
PREPARATION
1. Place the oil, vinegar,
salt, pepper, oregano and mustard in a large reseal- able plastic bag; seal and shake to combine. Add the chicken, seal and shake until chicken is evenly coated with the marinade. Refriger- ate for 3 hours.
2. Prepare a grill for di- rect-heat cooking over high heat. Place the chicken on the grill and cook until dark grill marks appear on the bottom, 4 to 5 minutes. Flip the chicken over and grill until cooked through, 4 to 6 minutes longer.
