French Toast Casserole

INGREDIENTS
Serves 8
1⁄2 cup (8 tablespoons) unsalted butter, melted 1 cup packed light brown sugar
4 large eggs
1 1⁄2 cups milk
1 teaspoon vanilla extract
1 loaf Texas Toast
Confectioners sugar, for sprinkling
PREPARATION
1. In a bowl, stir together the butter and sugar until well mixed. Pour evenly into a 9- by 13-inch baking dish. Lay a single layer of Texas Toast on top.
2. In another bowl, whisk together the eggs, milk and vanilla. Spoon half of the egg mixture onto the bread slices. Cover with a second layer of bread and spoon the remaining egg mixture on top. Cover with foil and refrigerate overnight.
3. Preheat oven to 350°F.
4. Bake, covered for 30 minutes. Uncover and bake for 15 minutes more. Just before serving, sprinkle with confectioners sugar.
