Gluten-Free Apple Crisp

INGREDIENTS
Serves 8
8 to 9 medium Macoun or Macintosh apples, peeled, cored and sliced 3⁄4 cup packed light brown sugar
1⁄2 cup Bob’s Red Mill gluten-free all-purpose baking flour
2⁄3 cup Bob’s Red Mill gluten-free old-fashioned rolled oats
3⁄4 teaspoon ground cinnamon
3⁄4 teaspoon ground nutmeg
1⁄3 cup (5 tablespoons plus 1 teaspoon) unsalted butter, softened
PREPARATION
1. Preheat oven to 365°F. Lightly grease an 8- by 8-inch or 11- by 7-inch glass baking dish.
2. Place the apples into the prepared baking dish.
3. In a bowl, combine the sugar, flour, oats, cinnamon, nutmeg and butter. Using your hands, pinch the ingredients together until crumbly. Spread the topping over the apples.
4. Bake, uncovered, until the apples are tender and the topping is slightly brown and crispy, 35 to 40 minutes. Make sure not to overcook.
