Asparagus, Goat Cheese and Pistachio Flatbread
Wonderful Pistachios
INGREDIENTS
Serves 2 to 4
4 ounces goat cheese
1 tablespoon finely chopped fresh chives 1 teaspoon lemon zest
5 large asparagus spears
1 tablespoon olive oil
Whole-grain flatbread or naan
Salt
Ground black pepper
3 tablespoons chopped shelled pistachios Lemon zest, for garnish
PREPARATION
1. Preheat oven to 400°F.
2. In a small bowl, stir together the goat cheese, chives and lemon zest. Set aside.
3. Using a vegetable peeler, shave the asparagus spears into long, thin shavings. Place in a small bowl and drizzle a little of the olive oil on top. Toss gently to coat.
4. Drizzle a little of the olive oil over the flatbread. Place dollops of the goat cheese evenly over the flatbread and top with asparagus. Season with salt and pepper. Transfer to a large baking sheet.
5. Bake until the cheese is melted and the flatbread is crisp, 12 to 15 minutes. Top with pistachios and lemon zest. Serve immediately.
