Mediterranean Blended Burger
Mushroom Council
INGREDIENTS
Serves 4
8 ounces cremini or white button mushrooms 2 tablespoons olive oil
1 pound ground beef
1⁄2 teaspoon salt
4 hamburger buns
Feta cheese, romesco sauce, sweet peppers and sautéed onions, for topping (optional)
PREPARATION
1. Finely dice the mushrooms or gently pulse in a food processor.
2. Heat 1 tablespoon of the oil in a skillet over medium-high heat. Add the mushrooms and sauté until golden brown, 5 to 7 minutes. Remove from heat and let cool for 5 minutes.
3. Transfer the cooled mushrooms to a bowl. Add the beef and salt, mixing until combined. Form the mixture into 4 patties.
4. Heat the remaining 1 tablespoon oil in the skillet over medium-high heat. Add the burger patties and cook to desired doneness. Place the patties between the hamburger buns and top as desired.
Mediterranean Watermelon Salad

INGREDIENTS
Serves 6
6 cups torn mixed salad greens
3 cups cubed seeded watermelon 1⁄2 cup sliced yellow onion
1⁄3 cup crumbled feta cheese
1 tablespoon extra-virgin olive oil Ground black pepper
PREPARATION
1. In large bowl, combine the greens, watermelon, onion and cheese. Just before serving, drizzle in the oil and toss to coat. Garnish with pepper.
