One-Skillet Sun-Dried Tomato Pasta

INGREDIENTS
Serves 4
2 tablespoons unsalted butter 2 garlic cloves, finely chopped 1 (14-ounce) can chicken broth 1⁄2 cup milk
12 sun-dried tomatoes, finely chopped 1⁄2 cup grated Parmesan cheese
8 ounces penne
Ground black pepper
PREPARATION
1. In a skillet over medium heat, melt the butter. Add the garlic and sauté until fragrant, 1 to 2 minutes.
2. Add the chicken broth, milk, penne, sun-dried tomatoes and ground black pepper, to taste. Raise the heat to medium-high, cover and bring to a boil. Stir, turn heat to medium-low, cover and simmer until pasta is al dente, 10 to 12 minutes, stirring frequently. Serve immediately with grated Parmesan.
