Pasta Bolognese

“This was Isabella’s great-grandmother Lena Borgatti Corsini’s Bolognese recipe. Her family was from Bologna, Italy. It is simple and so delicious. Definite family (and friend) favorite! The secret ingredient is the allspice.” DIANE KEEFE
INGREDIENTS
Serves 4 to 6
2 tablespoons olive oil
1 yellow onion, roughly chopped
1 pound ground beef or turkey
1 (16-ounce) can Hunt’s tomato sauce
1 carrot, peeled and grated on the large holes of a box grater Salt
Pepper
Ground allspice
1 pound pasta, such as farfalle, medium shells or spaghetti Grated Parmesan cheese, for serving
PREPARATION
1. Heat the olive oil in a saucepan over medium-high heat. Add the onion and cook until softened, then remove the onion with a slotted spoon.
2. Add the beef and cook until browned. Drain any excess fat. Add the tomato sauce. Fill the can with water and add it to the sauce. Add the carrot and season with salt, pepper and allspice.
3. Cover, lower heat to medium and cook 1 hour, stirring occasionally and checking the sauce after 45 minutes to avoid burning.
4. Cook the pasta according to package instructions until al dente. Drain in a colander. Combine the pasta and sauce in a large serving bowl and serve with cheese passed alongside.
