HLB World-Class Sweetand Spicy Chili

INGREDIENTS
Serves 8
Olive oil
2 yellow onions, diced
4 garlic cloves, minced
2 1⁄4 pounds beef brisket, trimmed of excess fat, cut into 1⁄2-inch cubes
1 tablespoon kosher salt, plus more, to taste
1 1⁄2 teaspoons ground black pepper, plus more, to taste
1 (14.5-ounce) can diced tomatoes with sliced green chiles
1 1⁄4 cups cold water
1 package Wick Fowler’s 2-Alarm Chili Mix or Carroll Shelby’s Chili Mix, omit- ting salt packet
3 tablespoons spicy brown mustard
1⁄2 cup bold and spicy barbecue sauce
1⁄4 cup ketchup
1 teaspoon sriracha
2 teaspoons Tabasco or other hot sauce
1 bottle Killian’s Irish Red beer or other bold beer
2 tablespoons Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon paprika
1⁄2 teaspoon dried oregano
1⁄2 cup honey, or more, to taste
1 yellow onion, roughly chopped
1 (15-ounce) can kidney beans
Steamed rice or tortilla chips, for serving
2 to 3 chopped green onions, for garnish
