Nana’s Meatloaf

“This recipe comes from my children’s great-grandmother. She used to own a diner in New Jersey and the meatloaf was on her menu. This was the only way I could get my kids to eat meatloaf. Sometimes, when the children were younger, I would shape the meatloaf as a heart for Valentine’s Day. They love this recipe. It is great comfort food.” MARIA KAISER
INGREDIENTS
Makes 1 meatloaf
2⁄3 cup bread crumbs
1 cup milk
1 1⁄2 pounds ground beef or turkey
2 large eggs
1⁄2 cup finely chopped yellow onion (optional)
1 teaspoon salt
1⁄2 to 3⁄4 teaspoon poultry seasoning
Steamed peas, mashed potatoes and gravy, for serving
PREPARATION
1. Preheat oven to 350°F.
2. Combine all the ingredients in a large bowl. Transfer mixture to a loaf pan, or shape into a loaf and place on a baking sheet. Bake 1 hour.
3. Serve with peas, mashed potatoes and gravy.
