Mum’s Curry Chicken Salad

INGREDIENTS
Serves 8
1 rotisserie chicken
Ground black pepper
1 1⁄2 cups mayonnaise
1⁄2 teaspoon red wine vinegar
2 tablespoons curry powder
1 cup finely chopped celery
1 cup dried cranberries
3⁄4 cup chopped walnuts
Pita pockets or bagel chips, for serving
PREPARATION
1. Remove the skin and bones from the chicken and discard. Chop the meat up finely and place in a bowl.
2. Add the pepper, mayonnaise, vinegar, curry powder, celery, cranberries and walnuts and stir until well combined. Serve in a pita pocket or on bagel chips.
