Mom’s Spinach Pie

“Below is my mother’s spinach pie recipe. I make this for my son, who loves it, and also at Easter for my brother and sister-in-law and nephews (they also love it!) I love it, too. The recipe is very special to me because it’s one of my mom’s best and she is now deceased. We were very close.” CHARLOTTE HEBERT
INGREDIENTS
Serves 8
3 (10-ounce) packages frozen chopped spinach, thawed and squeezed dry 3 ounces high-quality extra-virgin olive oil, such as Filippo Berio
4 ounces feta cheese, crumbled
16 ounces cottage cheese
1 teaspoon salt
2 frozen (thawed), ready-made or homemade unbaked deep-dish pie crusts
PREPARATION
1. Preheat oven to 375°F.
2. In a bowl, mix together the spinach, oil, feta, cottage cheese and salt. Spoon the mixture into a deep-dish pie dish lined with one of the crusts. Place the other crust on top and seal the edges.
3. Bake until crust is deep golden brown, about 1 hour 15 minutes.
