Mary’s Meat Loaf

INGREDIENTS
Serves 4
For the meat loaf:
1 large egg
3⁄4 cup milk
1 cup Italian bread crumbs
1 small yellow onion, finely chopped
1⁄4 cup grated Parmesan or Romano cheese 1 1⁄2 teaspoons Worcestershire sauce
1⁄4 cup ketchup
Dried oregano
Dried basil
Salt
Ground black pepper
1 pound ground beef
For the topping:
1⁄4 cup ketchup
1 tablespoon light brown sugar 1 teaspoon apple cider vinegar
PREPARATION
1. Preheat oven to 350°F.
2. To make the meat loaf, in a large bowl, combine the egg, milk, bread crumbs and onion until well mixed. Add the cheese, Worcestershire sauce, ketchup, and a generous shake of oregano, basil, salt and pepper. Mix well, then add the beef and mix until combined.
3. Transfer the mixture to a metal or glass baking dish or roasting pan and gently shape into a loaf. Bake, uncovered, 1 hour 15 minutes.
4. To make the topping, in a small bowl, stir together the ketchup, brown sugar and vinegar. Spoon on top of the meat loaf and bake 15 minutes more. Let stand 10 minutes before slicing and serving.
