Mediterranean Chicken

INGREDIENTS
Serves 4
1 tablespoon unsalted butter, softened 1 garlic clove, minced
1 cup fresh bread crumbs
Salt
Pepper
Dried parsley flakes
Garlic powder
Olive oil
4 chicken breast cutlets
1 tomato, chopped
1 (2.25-ounce) can sliced black olives
3⁄4 cup crumbled feta cheese
1 cup white wine
Boiled egg noodles or steamed rice, for serving
PREPARATION
1. Preheat oven to 350°F.
2. In a small bowl, mix together the butter and garlic until well combined. Spread the mixture onto the bottom of a baking dish.
3. In another bowl, season the bread crumbs with salt, pepper, parsley flakes and garlic powder. Add a drizzle of olive oil to moisten. Coat both sides of the chicken pieces in the bread crumb mixture.
4. Place the chicken in the baking dish and top with the tomato, olives and feta. Pour the wine around the chicken.
5. Bake until the chicken is cooked through, about 25 minutes. Serve over egg noodles or rice.
