INGREDIENTS
Serves 6
1 tablespoon canola oil
1 yellow onion, chopped
2 large stalks celery, cut into 1⁄2-inch dice
1 large green bell pepper, seeded and cut into 1⁄2-inch dice 1 pound 4 ounces ground turkey
1 (8-ounce) can no-salt tomato sauce
1⁄2 cup no-salt ketchup
1 tablespoon Worcestershire sauce
1 tablespoon balsamic vinegar
1 teaspoon kosher salt
1⁄2 teaspoon ground black pepper
6 whole-wheat sandwich buns, toasted
PREPARATION
1. Heat the oil in a large skillet over medium heat. Add the onion, celery and bell pepper and sauté, stirring occasionally, until softened, about 5 minutes.
2. Move the vegetables to one side of the skillet. Add the ground turkey to the cleared side of the skillet and cook, stirring occasionally and breaking up the meat with the side of a spoon, until the turkey is no longer pink, about 6 minutes. Stir together the turkey and vegetables.
3. Stir in the tomato sauce, ketchup, Worcestershire sauce, vinegar, salt and pepper and bring to a simmer. Turn heat to medium-low and simmer, stirring often, until slightly thickened, about 10 minutes.
4. Spoon about 2⁄3 cup of the turkey mixture onto the bottom of each sandwich bun. Cover with the bun tops and serve immediately.
