Sesame Oil Chicken

INGREDIENTS
Serves 2 to 4
1 to 1 1⁄2 tablespoons vegetable oil
10 to 20 thin slices ginger
1⁄2 chicken, chopped into small pieces
150 ml whiskey
5 to 8 red jujubes
10 grams goji berries
60 ml Chinese cooking wine, preferably Taiwanese rice wine 2 tablespoons sesame oil
Salt
PREPARATION
1. In a frying pan, heat the oil over medium-high heat. Add the ginger and sauté until fragrant.
2. Push the ginger to one side of the pan and add the chicken pieces, skin side down.
3. When the skin has browned, add the whiskey and just enough water to cover the chicken. Add the jujubes and bring to a boil. Turn heat to low and cook 30 to 40 minutes.
4. Add the goji berries, wine and sesame oil and cook for 10 minutes more. Season with salt.
