Spinach Smothered
Chicken

Preparation
1. Preheat oven to 375°F.
2. In a 9- by 13-inch baking dish, arrange the chicken evenly in a single layer. Top each breast with spinach, followed by mushrooms. Season with salt and pepper.
3. In a bowl, whisk together the cream cheese, oil and chicken broth until smooth. Pour the mixture over the chicken. Place a piece of foil over the baking dish but do not seal the edges.
4. Bake for 20 minutes, then remove the foil and bake, uncovered, 20 to 25 min- utes more. Sprinkle the mozzarella on top and bake until the cheese starts to brown, about 10 minutes. Let cool for 5 minutes before serving.

6 thin-sliced boneless skinless chicken breasts
1 small bag baby spinach
1 large package sliced mushrooms
Salt Ground black pepper
1 (7.5-ounce) container onion and chive cream cheese, softened
1⁄4 cup olive oil
1⁄2 cup chicken broth
8 ounces shredded mozzarella cheese
