1 large red onion, finely chopped
5 garlic cloves, minced 3 Roma tomatoes, chopped 1 tablespoon chili powder 1⁄2 tablespoon
ground turmeric 1 tablespoon ground cumin
1 tablespoon ground coriander
1 pound fresh okra, cut horizontally into small pieces, or 1 bag frozen okra
1⁄2 tablespoon dry mango powder or a few drops of lemon juice
Salt
Fresh cilantro leaves, for garnish (optional)
Pita, tortillas, bread or roti, for serving

“Okra, also known as ‘Lady-Fingers’ and
as we call it in India, ‘Bhindi,’ has been our family’s favorite vegetarian dish for a long time. It is easy to prepare, is a very tasty dish and has a lot of good nutritional value like vitamin A and is an excellent source
of antioxidant vitamin C, providing about 36% of daily recommended levels. It also has vitamin K, a co-factor for blood-clotting enzymes and strengthening of the bones.
It is readily available now in every store in the frozen food aisle. If you prefer cooking fresh okra, then it is available in any Asian store. This recipe has been passed on to me by my Mom and is consumed with fondness. Itisnotclumsytoeat,asitisadrytypeof dish and can be rolled up as a wrap with pita, tortillas, bread or roti.”
