Preparation
1. Heat oil in a large nonstick skillet over medium heat. Add the onion and cook, stirring occasionally, until translucent. Add the garlic and stir a bit, then add the tomatoes. Cook, stirring occasionally, until a paste forms. Add the chili powder, turmeric, cumin and coriander and cook, stirring occasionally, until fragrant.
2. Add the okra and cook, stirring occasion- ally, until lightly browned. Continue cooking until the okra is almost done, about 25 minutes, then add the mango powder
and season with salt. Just before serving, garnish with cilantro, if desired.
3. Serve the okra with pita, tortillas, bread or roti.
