Whole 30 Heaven - Shrimp and Sausage

for one meal together a day, but usually two meals a day during the summertime. It was a great way to stop, talk, be together and become healthier, together.” — Corri Ogburn
Preparation
1. Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Season the shrimp with Old Bay, add to the skillet and cook until opaque, 3 to 4 minutes. Transfer to a plate and set aside.
Ingredients
Serves 4
3 tablespoons olive oil
1 pound shrimp, peeled and deveined
2 teaspoons Old Bay Seasoning
1⁄2 yellow onion, diced
3⁄4 cup red bell pepper, diced
3⁄4 cup green bell pepper, diced
6 ounces smoked sausage, cooked and chopped
1 zucchini, chopped
2 garlic cloves, minced 1⁄4 cup chicken stock
1 (14.5-ounce) can diced tomatoes (we like Muir Glen fire roasted tomatoes with garlic)
2. Heat the remaining 2 tablespoons oil in
the skillet over medium-high heat. Add the
onion and peppers and cook for 2 minutes.
Add the sausage and zucchini and cook for
2 minutes more. Salt
3. Return the shrimp to the skillet, add the garlic and cook 1 minute. Pour in the chick- en stock and stir to mix.
4. Add the tomatoes and red pepper flakes and heat through. Season to taste with salt and pepper. Serve hot.
