Mango Salsa

Preparation
1. In a large bowl, mix together the tomatoes, onion, bell pepper, jalapeño, mango, cilantro, garlic and lime juice. Season to taste with salt.
2. Cover and refrigerate for several hours to let the flavors develop. Serve with tortilla chips.
Ingredients
Serves 6 to 8
9 Roma tomatoes, chopped 1⁄2 red onion, finely chopped
1⁄2 green or other color
bell pepper, finely chopped
1⁄3 to 1⁄2 jalapeño, finely chopped
1 to 2 ripe mangos, peeled, pitted and diced
1 bunch fresh cilantro, cut up with scissors
1 to 2 garlic cloves, finely chopped
Juice of 1⁄2 to 1 lime
Salt
Tortilla chips, for serving
