Pepper Poppers

“We had so many extra peppers in the garden one summer that we tried all kinds of recipes to use them up. This recipe became a favorite.” — MaryAnn Burden
Preparation
1. Preheat broiler to high.
2. In a medium bowl, stir together the goat cheese, cream cheese, onion, pepper and garlic powder until combined.
3. Cut the peppers in half lengthwise and remove the seeds and membranes. Arrange the pepper halves cut-side up on a baking sheet and fill the cavities evenly with the cheese mixture.
4. Broil until the peppers are tender and the filling begins to brown, 5 to 7 minutes.
5. In a microwave-safe bowl, combine the jelly and water. Microwave until saucy, about 30 seconds. Drizzle evenly over the peppers.
Ingredients
Serves 4
2 ounces goat cheese, softened
2 ounces cream cheese, softened
1 tablespoon grated red onion
1⁄4 teaspoon ground black pepper
1⁄4 teaspoon garlic powder
8 medium jalapeño peppers or mini red bell peppers
2 tablespoons currant jelly 1 teaspoon water
