Ingredients
Makes 1 loaf
2 large eggs 1⁄3 cup sour cream 1⁄2 cup canola oil 2 ripe bananas, peeled
and mashed 1 3⁄4 cups all-purpose flour 1 1⁄2 cups granulated sugar 1 teaspoon baking soda 1⁄2 teaspoon salt
Banana Bread

Preparation
1. Preheat oven to 325°F. Spray a loaf pan with nonstick cooking spray.
2. In a large bowl, stir together the eggs, sour cream, oil and bananas. In a medium bowl, sift together the flour, sugar, baking soda and salt. Add the flour mixture to the banana mixture and stir until combined. Transfer the batter to the prepared pan.
3. Bake until a toothpick inserted into the center of the loaf comes out clean, about 1 hour and 20 minutes.
4. Let cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
