6. Place the cheesecake on a wire rack and let cool in the pan for 3 hours. Cover and refrigerate until ready to serve.
7. To make the topping, place the jam and water in a small saucepan over medium heat and stir until melted. Just before serv- ing, brush the top of the cheesecake with the warm jam. To garnish, arrange raspber- ries around edge of the cheesecake and shave white chocolate curls onto the center.
