UMass Magic Apple Pie

Preparation
1. Preheat oven to 350°F. Grease a 9-inch pie dish.
2. In a bowl, beat the egg. Add the sugar, flour, baking powder, salt and cinnamon, if desired. Stir in the apple and raisins.
3. Spread the mixture into the prepared pie dish. Bake until golden brown or a toothpick inserted in the center of the pie comes out clean, 25 to 30 minutes.
4. Serve hot with whipped cream or ice cream.

Serves 8
1 large egg
3⁄4 cup granulated sugar
1⁄2 cup all-purpose flour
1 teaspoon baking powder
Pinch of salt
1⁄2 teaspoon ground cinnamon (optional)
1 medium tart apple, peeled, cored and diced
1⁄2 cup raisins
Whipped cream or ice cream, for serving
