Ingredients
Serves 10 to 12
4 tablespoons unsalted margarine or butter
3 large eggs 1 cup milk 1 cup all-purpose flour 1 teaspoon baking powder 1 pound sharp cheddar
cheese, grated
2 (10-ounce) boxes frozen spinach, drained
1 large yellow onion, chopped 1 pound bacon, chopped

Preparation
1. Preheat oven to 350°F.
2. In a 9- by 13-inch baking dish, melt the butter.
3. In a large bowl, beat the eggs well. Add the milk, flour and baking powder and mix well. Add the cheese, spinach, onion and bacon and mix well. Transfer the mixture to the prepared baking dish.
4. Bake until golden brown on top, 35 to 40 minutes. Cut into squares.
Note: This can be baked in a large muffin pan and served as mini quiches, or in 2 pie dishes for a breakfast quiche.
