Ingredients
Serves 8 to 10
6 cups peeled and sliced Granny Smith apples (about 6 apples)
1⁄2 cup plus 2 tablespoons peanut flour (or all-purpose flour)
1⁄2 lemon
1 cup packed light brown sugar
1⁄2 cup creamy peanut butter 1⁄2 cup canola oil
2 cups old-fashioned rolled oats
1⁄4 teaspoon salt
1⁄2 teaspoon ground cinnamon
1⁄2 cup roasted peanuts Vanilla ice cream, for serving

Preparation
1. Preheat oven to 350°F.
2. In a medium bowl, toss the apples with
2 tablespoons of the peanut flour. Transfer to an 8-inch square pan and squeeze lemon juice on top. Stir in 1⁄2 cup of the sugar.
3. In a medium bowl, combine the peanut butter and oil. Add the remaining 1⁄2 cup peanut flour, oats, salt, cinnamon and remaining 1⁄2 cup sugar; mix well. Pour the oat mixture on top of the apple mixture and spread in an even layer.
4. Bake for 40 minutes, then sprinkle the peanuts on top and bake until the apples are tender and the top begins to brown, 5 to 10 minutes more. Serve with vanilla ice cream.
