1 (1-pound) bag baby organic carrots
2 organic celery stalks, ends trimmed
1 organic Spanish onion, peeled and quartered or cut into large pieces
4 to 6 garlic cloves, chopped
2 pounds organic chicken thighs
Cooked rice or noodles, for serving
Salt, to taste

“This is Max’s great-grandmother (“Babci”) Julia Nowak Marek’s recipe, from her parents who came from Poland. She cooked it weekly into her 90s at the family farmhouse her father built in Ludlow MA, where five generations of the family have since lived or visited every week. Babci’s made with love ‘Cure-All’ Chicken Soup never fails to make everyone feel better when they visit! Max and his mother created this organic five-in- gredient easy version (it had never been written down before, since it was a family secret recipe; hint: the SPANISH onion is the secret!) for his nutrition class.
