Ingredients
Serves 4
3 to 4 large zucchini or 4 cups store-bought zoodles
2 tablespoons extra-virgin olive oil
Salt Ground black pepper
2 cups chopped plum tomatoes or halved cherry tomatoes
1 cup mozzarella pearls or chopped fresh mozzarella
1⁄2 cup shredded fresh basil leaves

Preparation
1. Spiralize the zucchini, or use store- bought zoodles.
2. Heat the oil in a large sauté pan over medium-high heat. Add the zoodles, season with salt and pepper and sauté
for 5 minutes.
3. Add the tomatoes and sauté for 2 minutes.
4. Remove from heat and stir in the mozzarella and basil.
Note: Cooked chicken, ham or tofu can be added.
