Chicken Divan

Preparation
1. Preheat oven to 350°F.
2. Heat the oil in a large skillet over medium-high heat. Add the chicken, season with salt, pepper and garlic powder and cook until just cooked through. Transfer the chicken to a 9- by 13-inch baking dish and top with the broccoli.
3. In a bowl, whisk together the chicken soup, mayonnaise and lemon juice. Pour over the chicken and broccoli. Top with the crackers and cheese.
4. Bake until the sauce is bubbly, about 30 minutes.
Ingredients
Serves 4
2 tablespoons olive oil
4 boneless, skinless chicken breasts
Salt
Ground black pepper Garlic powder
1 head broccoli, cut into florets, or 1 small bag frozen broccoli, cooked until tender
1 (10.5-ounce) can cream of chicken soup
1⁄2 cup mayonnaise
1 tablespoon lemon juice
1 sleeve Ritz-style crackers, crushed
1 cup grated cheddar cheese
