Ingredients
Serves 6 to 8
1⁄2 cup Dijon mustard
1⁄4 cup cooking sherry
1 cup bread crumbs
Dijon Parmesan Chicken

3 pounds thin boneless skinless chicken breasts
Preparation
1. Preheat oven to 375°F.
2. In a medium bowl, whisk together the mustard and sherry. In another bowl, combine the bread crumbs and cheese.
3. Dip each piece of chicken in the mustard mixture, followed by the bread crumb mixture, pressing gently to help the crumbs adhere to both sides.
4. Place the breaded chicken on a baking sheet and bake until the chicken is cooked through and the coating is brown and crispy, about 30 minutes.
