Everyone in the family loves this salmon dish.
INGREDIENTS
1 1⁄3 lb. salmon fillet cut into 4 serving size pieces. No need to remove from the skin. 1⁄4 cup pesto sauce
1⁄3 cup Panko bread crumbs
1-2 tbsp. olive oil
1 lemon cut into 4 wedges
INSTRUCTIONS
1. Preheat oven to 425o F.
2. Lightly grease a jelly roll pan with olive oil and evenly space the fillet pieces in the pan.
3. Top each section of salmon with pesto sauce and spread to cover each piece. Next sprinkle with Panko. Drizzle each section lightly with olive oil.
4. Bake the salmon for approximately 10 minutes per inch of fillet thickness.
5. When serving, the salmon will separate easily from the skin with a wide spatula.
6. Serve with your favorite sides and a lemon wedge.
