This pizza is a whole meal in each slice. It’s adapted from the California Pizza Kitchen recipe and is a favorite in our house, especially with our UMass student, who specially asked me to submit it.
INGREDIENTS
Pizza dough
3 cups all-purpose flour 1⁄2 tsp. salt
1 tsp. instant yeast
1 1⁄2 cups warm water
Peanut sauce
1⁄2 cup peanut butter, chunky or smooth 1⁄3 cup hoisin sauce
1 tbsp. honey
2 tsp. red wine vinegar
2 tsp. minced ginger
1 tbsp. sesame oil
2 tsp. soy sauce
1 tsp. chili sauce or dried red chili flakes 2 tbsp. water
Pizza toppings
12 oz. chicken breast, cooked and cut into 1” cubes
8-10 oz. mozzarella, shredded 4 scallions, sliced thin
1 carrot, shredded
3 tbsp. roasted peanuts
