INSTRUCTIONS
Pizza dough
1. Mix flour, salt, yeast and warm water together to make a smooth dough, not sticky but still soft and stretchy. Let rise in a warm spot for an hour.
Peanut sauce
1. Stir all sauce ingredients together in a small pan over medium heat. Bring it just to a boil and cook for one minute only, stirring constantly. Set aside and let cool.
Pizza
1. Stretch out the risen dough into a large pizza, about 15” across (can also be divided into smaller portions).
2. Spread half the peanut sauce on the dough, followed by most of the mozzarella cheese.
3. Combine the second half of the sauce with the cooked chicken to coat the chicken and distribute the chicken over the pizza. Sprinkle the remaining cheese over the chicken. Shred the carrot over the pizza and sprinkle the peanuts on top. Scallions can be sprinkled on before or after baking.
4. Bake on a preheated pizza stone at 500o F for about 10 minutes, until crust is golden brown and cheese is melted.
