This was one of Madison’s favorite dinners that we make together when she is home. When I asked her which recipe to submit - she did not hesitate to say “Lettuce Wraps!”
INGREDIENTS
1 lb. ground turkey
2 large carrots, chopped
1 can water chestnuts, chopped
1 tbsp. sesame oil
3 tbsp. coconut aminos or soy sauce
1⁄2 cup hoisin sauce
Lettuce ‘cups’ - either butter, romaine or iceberg
Optional condiments: chopped cashews, chopped cilantro, sliced scallions, bean sprouts, Siracha sauce
INSTRUCTIONS
1. Heat oil in a large saucepan and brown turkey.
2. Add carrots and water chestnuts. Sauté 2-3 minutes.
3. Add coconut aminos and hoisin sauce. Let simmer on medium/low 5 minutes.
4. Serve with lettuce cups and condiments.
5. Enjoy!
