This recipe has been handed down in my son’s Boy Scout troop. It is easy to make for a quick dinner and can also be made easily when camping. We all love it and have no idea where the name came from
INGREDIENTS
1 1⁄2 lb. ground beef
4 tsp. taco seasoning
1 can Rotel tomatoes
1 can black beans
1 can corn
Corn chips or flour tortillas
Shredded Mexican cheese, lettuce, tomato and black olives and salsa, optional to garnish
INSTRUCTIONS
1. In a skillet set to medium heat, brown beef and drain liquid.
2. Add taco seasoning, tomatoes, black beans, and corn to the browned beef. Heat through.
3. Serve with corn chips or flour tortillas. It can be garnished with shredded Mexican cheese, lettuce, tomato and black olives and salsa to taste.
