I have been making this casserole since my kids were toddlers. This is a simple recipe to make and is perfect for quick family dinners and pot luck meals. Even though my kids did not usually like fish when they were little, this casserole was an exception, and they have always loved this dish.
INGREDIENTS
1 can (10 3⁄4 oz.) condensed cream of mushroom soup
1 cup milk
3 cups hot cooked rotini pasta
1 can (12 1⁄2 oz.) tuna packed in water, drained and flaked 1 1⁄3 cups French’s French Fried Onions, divided
1 package (10 oz.) frozen peas and carrots
1⁄2 cup (2 oz.) shredded cheddar or grated Parmesan cheese
INSTRUCTIONS
1. Combine soup and milk in a 2-quart microwavable shallow casserole dish (with a cover).
2. Combine and stir in tuna, cooked pasta, 2⁄3 cup French’s French Fried Onions, vegetables and cheese.
3. Cover casserole dish. Microwave on high for 10 minutes (OR bake in covered dish in 350˚ F oven for 25-30 minutes) until heated throughout. Stir combined ingredients halfway through cooking time.
4. Top with remaining 2⁄3 cup French’s French Fried Onions. Microwave for 1 minute more or until onions are golden.
5. Serve with a warm crusty loaf of bread.
