William’s father went to the University of Buffalo, so we’ve enjoyed making Buffalo wings for a long time. Craving Buffalo wings one time but dreading all the prep work (never mind the high calories and fat content), I came up with this quick and quasi-guilt free way to get our family fix without all the work.
INGREDIENT
Several large romaine lettuce leaves, washed, dried
1 boneless, skinless chicken breast, cooked and shredded
Frank’s Red Hot sauce, to your taste
1 package matchstick/shredded carrots, there will be leftovers
1 small jar Marie’s blue cheese dressing (or other high quality blue cheese dressing) Oil
Salt
INSTRUCTIONS
1. Sauté chicken breast in oil with a pinch of salt until done.
2. When chicken breast is sautéing, wash and dry several romaine lettuce leaves. Set aside.
3. After chicken is sautéed, shred and then transfer the shredded meat to a bowl. Add Frank’s Red Hot Sauce to your desired taste and mix thoroughly with chicken.
4. Lay individual lettuce leaves on a flat workspace. Place shredded, spiced chicken along the center of the lettuce leaf. Top shredded chicken with the matchstick carrots.
5. Top off the wraps by drizzling or dropping dollops of blue cheese dressing on the chicken/ carrots/lettuce leaves.
6. Wrap like a burrito and enjoy!
