This casserole is a crowd favorite when we have the Seidel family together.
We call it “Christmas” casserole because of the red peppers and green artichokes, but it’s good any time of the year.
INGREDIENTS
1 tbsp. oil
1 cup bread crumbs
2 lb. chicken cutlets
4 tbsp. softened butter
1⁄4 cup grated Romano cheese
1 jar marinated artichoke hearts, drained, cut into small pieces 1 8 oz. jar roasted red peppers drained, cut into small pieces
8 oz. Monterey Jack cheese thinly sliced
INSTRUCTIONS
1. Heat oven to 350˚ F.
2. Put oil in 9 x 14 baking dish. Add uncooked chicken.
3. Mix crumbs, butter, and grated cheese. Spread over chicken.
4. Arrange artichoke and red peppers over chicken and crumbs. Top with sliced cheese.
5. Bake for 40 minutes.
