UNCLE SAL’S ALMOND / CHOCOLATE CHIP BISCOTTI
INGREDIENTS
2 cups flour
3 extra large eggs
1 1⁄2 cup sugar
1 tsp. baking powder 1 tsp. vanilla
1 tsp. anise extract
1 cup of whole almonds or 1 cup semisweet chocolate chips.
1 Mix all ingredients until combined. Mixture should be thick.
2 Lay out parchment paper on a cookie sheet. Roll out or spread mixture into 2 logs approximately
2 to 3 inches wide. Leave enough room between the logs because they will expand.
3 Bake in 350°F oven for 30 minutes. Remove from oven and let rest for 5 minutes.
4 Place logs on cutting board. Cut each log into 1-inch strips.
5 Place cookies back on baking sheet and place in oven for about
2 minutes.
6 Sprinkle generously with powdered sugar.
Makes about 28 biscotti.
Note: I usually make 1 batch almond and 1 batch chocolate chip.
