BRAYDEN’S TROPICAL FRUIT SALAD WITH PAPAYA CREAM
INGREDIENTS
For papaya cream:
1 cup plain nonfat yogurt
3 tbsp. unsweetened papaya concentrate
3 tbsp. fruit-sweetened apricot jam
1⁄2 tsp. fresh grated ginger
For the salad:
1 small pineapple, peeled, cored and cut into 3⁄4-inch dice
1 papaya, peeled, seeded and cut into 3⁄4-inch dice
2 guavas, peeled and cut into 1⁄2-inch dice
1 banana, peeled and cut into 1-inch slices
Dash freshly ground nutmeg
2 tbsp. fresh lime juice
1 tbsp. pistachios, finely chopped
1 In small bowl, combine ingredients for papaya cream.
2 In serving bowl, mix fruits together. Sprinkle with nutmeg and lime juice. Top with papaya cream and pistachios.
Serves 6.
