ROSELLI FAMILY FAMOUS MEATBALLS
INGREDIENTS
1 sweet onion, chopped 2 lbs. hamburger
1.5 lbs. sweet sausage
4 eggs
2 tsp. salt
3 tsp. pepper
1.5 bunches parsley
1⁄2 cup heavy cream or milk
2/3 cup Parmesan cheese 2/3 cup Romano cheese
1 Heat oven to 375°F.
4 Form the mixture into balls. Bake in oven for 15 minutes, or until internal temperature reaches 155°F -160°F.
Makes about 60 meatballs.
2 Heat some olive oil in a pan. Cook onion on low heat to soften. When the onion is soft, remove from pan and place in refrigerator to cool.
3 Place remaining ingredients in a large bowl. When onion has cooled, add it to the bowl and mix every- thing together well. If mixture is still wet, add more cheese.
