CALIFORNIA CHICKEN
INGREDIENTS
For the topping:
1 cup plum or grape tomatoes, halved
2 avocados, diced
1⁄4 cup fresh basil, chopped
1 tbsp. olive oil
Juice of 1⁄2 lemon
Dash salt and pepper
4 slices fresh mozzarella cheese
3 While chicken is cooking, combine all ingredients except cheese in
a bowl.
4 When chicken is cooked, plate and top each breast with a mozzarella slice and the avocado tomato salsa.
Serves 4
For the chicken:
4 boneless, skinless chicken breasts
2-3 cloves garlic, minced 2 tbsp. balsamic vinegar 1 tbsp. Italian seasoning 1⁄2 tsp. salt
1⁄4 tsp. pepper 2 tbsp. olive oil
1 Combine chicken, garlic, vinegar, and seasonings in a bowl. Stir to completely coat the chicken. Cover, place in refrigerator, and allow to marinate for 30 minutes, or up to 24 hours.
2 Heat oil in a large skillet over medium-high heat. Cook chicken for 8-10 minutes, or until cooked through.
