INGREDIENTS
1 1/2 lbs. thin, skinless, boneless chicken cutlets
2 eggs
Breadcrumbs
Olive oil
1 10.5-oz. can cream of chicken soup
1 8-oz. pkg. sharp cheddar cheese
Garlic powder

CHEESY CHICKEN
1 Heat oven to 350°F.
2 Dip the chicken in eggs, then in breadcrumbs. Cook chicken in pan with olive oil and then set aside.
3 Using the same pan, add the cream of chicken soup (no milk or water added). After soup is mixed
and incorporated, add cheddar cheese. Cook, stirring, until soup and cheese are mixed together and the mixture bubbles slightly. Then add garlic powder to taste.
4 Place the chicken side by side in a baking dish. Pour the soup mixture evenly over the chicken.
5 Bake for 20-30 minutes. Serve over rice.
