GLUTEN FREE PESTO PASTA
INGREDIENTS
broth
3⁄4 cup milk
1 tbsp. cornstarch
1/3 cup pesto
1 cup broccoli
1⁄2 cup grated Parmesan cheese, divided
In a small bowl, stir together broth, milk and cornstarch. Pour into the skillet and cook, stirring, until it comes to a boil.
Add pesto and half the cheese. Then add broccoli and cook until the broccoli is tender. Stir in pasta and toss to coat. Top with remaining cheese.
Serves 4.
1 pkg. gluten free pasta 2 tbsp. olive oil
4 boneless chicken breast halves, cut into bite-size pieces
2 cloves garlic, minced
1 Bring a large pot of slightly salted water to a boil. Add pasta and cook according to package directions, or until al dente; drain.
2 Heat oil in a large skillet over medium heat. Add chicken and garlic and sauté until chicken is almost cooked.
