PORTUGUESE SHRIMP MOZAMBIQUE
INGREDIENTS
For the shrimp:
1 tbsp. olive oil
1⁄2 medium onion, chopped
3 cloves garlic, minced 1⁄2 cup dry white wine
1 lb. large shrimp, fresh or frozen, peeled
2 tbsp. unsalted butter
Sea salt and pepper, to taste
For the sauce:
2 tbsp. Tabasco or Sria- cha sauce
1 tbsp. olive oil
1 tbsp. water
1 clove garlic, minced 1 tsp. paprika
1 tbsp. tomato paste
1 tbsp. fresh parsley
1 Heat oil in cast iron skillet.
Add onion and garlic and cook until fragrant, about 2 minutes. Add wine and cook until reduced by half,
4 minutes.
2 Add shrimp and cook until no longer pink, 4 minutes. Add butter and season with salt and pepper.
3 Meanwhile, whisk the sauce ingredients together in a bowl.
4 Stir sauce into skillet and cook until heated through, 2 minutes. Sprinkle with fresh parsley and serve over white rice.
