INGREDIENTS
4 medium zucchini
1 tsp. Italian seasoning, or anything that you like; we use basil and parsley
1⁄2 cup marinara sauce
1⁄2 cup shredded mozzarella cheese
1⁄4 cup mini pepperoni slices (optional)
ZUCCHINI PIZZA
1 Heat oven to 400°F
2 Line a baking sheet with parchment paper, or lightly spray with oil. Cut zucchini in half lengthwise and scrape out seedy center. Place zucchini cut side up on baking sheet and sprinkle with seasoning.
3 Spoon marinara sauce evenly over the zucchini. Top with mozzarella. Add pepperoni, if desired (or any pizza topping you like)
4 Bake 15 minutes or more, until cheese is melted and zucchini are as tender as you like. Serve hot.
